Double Chocolate Oatmeal Lava Cake Recipe

Individual treats with a unique personality. Rich, molten lava cakes oozing with bittersweet and white chocolate, and complemented with oatmeal. It’s a naturally sweet pleasure. Makes 4 cakes (8 servings).

Ingredients

  • ½ cup of butter cut into pieces

  • 3 oz. bittersweet chocolate, tiny pieces

  • 3 oz. white chocolate, tiny pieces

  • ¾ cup oatmeal

  • ¼ cup all-purpose flour

  • 1 Tbsp of cinnamon

  • 1 tsp vanilla extract

  • 3 eggs, separated**

  • ½ cup of Truvia® Original Calorie-Free Sweetener Spoonable Jar**

Directions

  • 1.

    Preheat oven to 425° F.

  • 2.

    Generously butter the inside of four 1-cup baking ramekins.

  • 3.

    Bring 3 cups of water to a boil. Place a metal mixing bowl on top to use as a double boiler. Melt the butter and chocolate together in the double boiler and stir until fully mixed. Add the oats, vanilla and cinnamon.

  • 4.

    In a separate bowl, whip the egg whites and Truvia Original Sweetener with an electric mixer until soft peaks form. Do not over mix.

  • 5.

    Fold the chocolate and egg whites together gently and pour into the ramekins.

  • 6.

    Bake about 12-14 minutes (the middle should still look wet).

  • 7.

    Loosen cake from ramekin by sliding a knife around the inside of the ramekins. Let the cakes cool. Turn each cake over on a serving plate.

  • 8.

    Refrigerate leftovers.
