These classic peanut butter cookies are tender, fulfilling and simple to make. Made with Truvia Sweet Complete™ Granulated All-Purpose Sweetener. Makes 3 dozen cookies.

  • 1 12 cups Truvia Sweet Complete™ Granulated All-Purpose Sweetener

  • 1 cup (250 mL) peanut butter

  • 3 Tbsp (45 mL) vegetable shortening

  • 3 Tbsp (45 mL) + 2 tsp (5 mL) unsalted butter

  • 2 eggs**

  • 12 tsp (2.5 mL) vanilla extract

  • 2 cups (500 mL) all-purpose flour, sifted

  • 34 tsp (3.7 mL) baking soda

  • 12 tsp (2.5 mL) salt

  • Preheat oven to 375° F(190°C).

    Preheat oven to 375° F(190°C).

    Combine Truvia Sweet Complete™ Granulated All-Purpose Sweetener, peanut butter, shortening, butter, eggs and vanilla extract in a large bowl and mix on low speed until combined.

    In a second smaller bowl, whisk together flour, baking soda, and salt. Add slowly to the larger bowl and mix until combined. Add water if not coming together.

    Shape dough into 1 14 inch balls, flattening slightly on the top and bottom.

    Place cookies 3 inches apart on a parchment-lined or ungreased cookie sheet.

    Using a fork, press a crisscross pattern in each cookie.

  • 7.

    Bake 14-15 minutes or until lightly browned.

  • 8.

    Allow to rest 5 minutes on pan, then place cookies on a wire rack to cool completely.

    Store in airtight container.
